  1. 1 of 4 In a bowl, blend broth, soy sauce, oyster sauce and cornstarch. Set aside.
  2. 2 of 4 In large nonstick skillet, heat 1 tablespoon of oil over medium-high heat. Add shrimp and salt; stir-fry 4 minutes until shrimp is cooked through. Remove to a plate and keep warm.
  3. 3 of 4 Add remaining oil and stir-fry bok choy for 5 minutes. Add red pepper and scallion and cook an additional 3 minutes.
  4. 4 of 4 Add broth mixture and bring to a simmer. Add shrimp; cook for 1 minute until heated through. Stir in cilantro and serve with rice, if desired.
