Fluffy Carrot Couscous

  1. 1 of 1 Saute carrot and scallion in nonstick skillet with oil for 4 minutes. Add mint and cook 1 minute longer. Stir in couscous and water; add salt, pepper, lemon juice to taste. Remove from heat, let stand 5 minutes and fluff with fork.
