Garlic Roasted Potatoes
- 1 of 3 Heat oven to 425 degrees F. Cut potatoes into quarters, larger ones into eighths.
- 2 of 3 In large roasting pan, toss potatoes, artichoke hearts, garlic, olive oil, salt and pepper.
- 3 of 3 Roast in 425 degrees F oven until potatoes are tender and browned, tossing once, 30 to 40 minutes. Remove to large bowl; toss with lemon rind, lemon juice and parsley. Serve warm or at room temperature.
