Mango Salsa



  1. 1 of 3 Combine in large bowl red onion, chopped, rinsed and drained; and lime juice.
  2. 2 of 3 Prepare following ingredients, then add all together to onion mixture and stir: mango, cut in half around pit, flesh scored, sliced off in pieces from skin, and coarsely chopped; sweet red pepper, cilantro, garlic, orange juice, jalapeno.
  3. 3 of 3 Season with salt and cracked black peppercorns, to taste. Best served immediately. This salsa will keep, covered and refrigerated, for 1 day. Makes about 3 cups.
