Mashed Sweet Potatoes with Caramelized Onions
In a medium-size saucepan, cover sweet potatoes with cold water and bring to a boil over medium-high heat. Boil for 14 minutes or until potato is easily pierced with a knife. Drain; return to pot.Advertisement
Stir cream, 1 tablespoon butter, sugar, 1/2 teaspoon thyme, and 1/2 teaspoon each salt and black pepper into pot with potatoes. Mash until smooth. Cover and set aside.
While potatoes are cooking, melt remaining 1 tablespoon butter in a large nonstick skillet over medium-high heat. Add onions, remaining 1/2 teaspoon thyme, and remaining 1/4 teaspoon each salt and pepper to skillet. Cook, stirring frequently, for 12 minutes or until browned and softened.
Set aside 1/4 cup onions. Place potatoes in a serving bowl and stir in remaining onions, sprinkling reserved onions on top. Serve immediately.
