Olive Oil Smashed Potatoes

Makes 6



  1. 1 of 2 Cut potatoes into 1-inch pieces; cook in lightly salted water for 15 minutes, until tender. Drain.
  2. 2 of 2 Smash with a potato masher and gradually beat in olive oil. Season with salt and each pepper and nutmeg. Stir in chopped parsley.
