  • Heat oven to 375 degrees F. Coat an 11 x 7-inch baking dish with cooking spray and set aside.

  • Whisk together the milk, eggs, egg whites, salt, and cayenne and nutmeg in a large bowl. Add the bread and toss to combine. Let stand 5 minutes or until most of liquid is absorbed.

  • Meanwhile, cook the sausage, onion, bell pepper, and garlic in a large nonstick skillet coated with cooking spray, over medium-high heat, stirring often, 6 to 8 minutes or until sausage is cooked and vegetables are softened.

  • Stir the sausage mixture, the spinach, and 1/2 cup of the cheese into the bread mixture. Spoon into prepared baking dish. Bake 30 minutes. Remove from oven and top with the remaining 1/2 cup of cheese. Bake an additional 10 minutes or until cheese melts.
