Sausage, Spinach and Swiss Strata
This sausage, vegetable, and cheese breakfast casserole recipe takes brunch to a tasty level. Cayenne pepper and nutmeg combine to add a zesty, nutty flavor to the egg mixture.

  1. 1 of 4 Heat oven to 375 degrees F. Coat an 11 x 7-inch baking dish with cooking spray and set aside.
  2. 2 of 4 Whisk together the milk, eggs, egg whites, salt, and cayenne and nutmeg in a large bowl. Add the bread and toss to combine. Let stand 5 minutes or until most of liquid is absorbed.
  3. 3 of 4 Meanwhile, cook the sausage, onion, bell pepper, and garlic in a large nonstick skillet coated with cooking spray, over medium-high heat, stirring often, 6 to 8 minutes or until sausage is cooked and vegetables are softened.
  4. 4 of 4 Stir the sausage mixture, the spinach, and 1/2 cup of the cheese into the bread mixture. Spoon into prepared baking dish. Bake 30 minutes. Remove from oven and top with the remaining 1/2 cup of cheese. Bake an additional 10 minutes or until cheese melts.
