  2. 2 of 3 In a nonstick skillet over medium heat, saute mushrooms in canola oil until soft, 3 to 5 minutes.
  3. 3 of 3 Add the egg mixture and scramble, stirring until fully cooked, about 3 to 5 minutes. Makes 1 serving.
