  1. 1 of 4 Heat oven to 350 degrees. Coat a 1-quart baking dish with nonstick cooking spray.
  2. 2 of 4 In a food processor, combine 1 can of the beans, the onion, cilantro, vinegar, olive oil, garlic, cumin, salt and pepper. Process until smooth. Remove to a medium bowl and stir in remaining can of black beans and 3/4 cup of the Monterey Jack.
  3. 3 of 4 Spoon mixture into prepared baking dish, top with remaining 1/4 cup cheese and bake at 350 degrees for 25 minutes, until bubbly.
  4. 4 of 4 Serve with chips. Garnish with lime and cilantro, if using.
