  • Heat 1 tbsp oil in a large skillet over medium heat. Stir in shallots and garlic; cook 3 minutes. Remove to a bowl.

  • Increase heat to medium-high. Add butter and 2 tbsp oil. Stir in mushrooms. Cook 15 to 18 minutes, stirring occasionally, until mushrooms are browned.

  • Return shallots and garlic to pan. Add thyme. Pour in brandy, scraping bottom of pan to release any brown bits. Season with salt and pepper.
