Wild Mushrooms and Shallots
Heat 1 tbsp oil in a large skillet over medium heat. Stir in shallots and garlic; cook 3 minutes. Remove to a bowl.Advertisement
Increase heat to medium-high. Add butter and 2 tbsp oil. Stir in mushrooms. Cook 15 to 18 minutes, stirring occasionally, until mushrooms are browned.
Return shallots and garlic to pan. Add thyme. Pour in brandy, scraping bottom of pan to release any brown bits. Season with salt and pepper.
