  • Prepare wild and brown rice blend as per package instructions and cool to room temperature. Stir in mango, peeled and diced cucumber, sliced scallions, and chopped cilantro. Combine orange juice, orange zest, olive oil, salt and cayenne. Fold into rice mixture.

  • Grill 4 mango and jalapeño chicken sausages and slice. Stir into rice mixture.
