Buying: With prices ranging from $25 to $40 per skillet (depending on size), you can’t afford not to have one. Our favorite budget brand: Lodge. And if you’re a flea market fan, scout out a Wagner’s 1891 or Griswold. For gorgeous colors (enamel-coated) at a higher price point, look for Martha Stewart at Macy’s, Le Creuset or Staub.
Seaoning: Keeping the surface nonstick turns the pan into the ultimate workhorse. To season: Heat oven to 350°. Coat pan inside and out with vegetable oil. Place upside down on oven rack and bake for 1 hour. Cool and wipe with paper towels.
Cleaning: Use a soap-free nonabrasive sponge to remove any stuck-on foods and rinse; wipe out pan after each use and coat with a thin layer of oil before storing.
