Chicken with Garlic and Sage Sauce
Making a pan sauce is quick and adds so much flavor to your meal. Get a good sear on your chicken so you'll have plenty of browned bits for your sauce. And here's some sage advice: If you don’t have fresh sage, use 2 tsp dried sage instead. We paired our chicken with green beans that cook up perfectly in the microwave. But if you don’t have green beans, cook broccoli florets the same way, but for 2 to 3 minutes.
Shrimp Fra Diavolo
Fra diavolo—loosely translated as "among the devil"—is a spicy tomato-based sauce. Here, crushed red pepper is sauteed with garlic to bring real heat to the base of the sauce. Fra diavolo is great with all kinds of seafood. Try these swaps:
- Stir in cooked lobster meat with the tomatoes to heat through.
- Nestle cleaned mussels in the sauce, cover pan and cook until shells open, about 8 min.
- Pick through jumbo lump crab for shells, then add at the end with some of the juices.
Sheet Pan Pork, Butternut Squash and Potato
One-pan meals are easy to prep, easy to cook and easy to clean. What's better is that roasting meat and vegetables gives them so much flavor. We made one balsamic-rosemary sauce and used it to season the butternut squash, potatoes and pork tenderloin. Give the pork a quick brown in a pan so that you get beautiful color before it goes into the oven. To cut even more time off of this quick-prep dish, buy your butternut squash already peeled and cut into chunks.
Crispy Tofu with Peanut Sauce
We used cornstarch for dredging our tofu because it makes fried foods extra crispy. It’s a pure starch, so it works even better than wheat flour, which contains gluten. Try it with fish, pork or vegetables. Or mix it with an equivalent amount of AP flour and use for fried chicken.
Slow Cooker Curried Lentil Soup
If you really want to speed things up, make this recipe in your Instant Pot: Cook aromatics in butter for 30 seconds using the Sauté function. Stir in lentils and turn off pot. Add onion, carrot and celery, but try vegetable broth instead of water for a more long-simmered flavor. Seal the lid, set pot to Manual and cook 15 minutes. Manually release steam and stir in coconut milk and lemon juice. Blend as directed.
