Iman's Turkey Burger Recipe

Burgers:1 package (1.3 pounds) ground turkey1 large shallot, chopped2 cloves garlic, chopped2 tablespoons lemon juice1 teaspoon fresh thyme, chopped3/4 teaspoon salt1/8 teaspoon black pepper4 slices sharp Vermont cheddar cheese
Topping:1 tablespoon olive oil1 medium red onion, peeled and thinly sliced8 ounces sliced mushrooms1 teaspoon Worcestershire sauce1/8 teaspoon salt1/8 teaspoon black pepperFocaccia or hearty whole-grain bread, slicedMustard or mayonnaise, if desired
- Burgers: In a bowl, mix together turkey, shallot, garlic, lemon juice, thyme, salt, and pepper. Form into 4 patties, each about 4 inches in diameter. Cover and refrigerate for at least 30 minutes.
- Heat an outdoor grill or stovetop grill pan to medium-high heat. Coat with cooking spray and grill burgers 4 to 5 minutes per side, covering halfway through cooking, until internal temperature reaches 160 degrees F. on an instant-read thermometer. Add a slice of cheese to each burger and let melt.
- Topping: While burgers are grilling, heat olive oil in a large skillet over medium-high heat. Add onions and mushrooms and saute for 8 minutes, stirring occasionally, until golden brown. Season with Worcestershire sauce, salt, and pepper.
- Serve burger on grilled focaccia or whole-grain bread, spread with mustard or mayonnaise if desired. Top with sauteed onions and mushrooms.
