How to Make the Perfect Eggs
1 Bring a medium pot of water to a simmer, adding a splash of white vinegar.
2 One at a time, crack eggs into a small dish and slide egg into water.
3 Poach in simmering water for 3 to 4 minutes or to desired doneness, then remove to paper towels with a slotted spoon.
1 Add 2 tbsp butter to a nonstick skillet and crack in 2 eggs.
2 Fry over medium for 3 to 4 minutes, until whites are set. Sprinkle with salt and pepper.
3 If you would like your eggs over-easy, gently flip, cook 1 minute and remove from heat.
1 Place desired amount of eggs in a medium saucepan and add enough water to cover by 1 inch.
2 Heat over medium just until simmering.
3 Reduce heat to maintain a simmer and cook for 8 to 10 minutes (go with the shorter time for softer centers, the longer range for firm centers).
4 Drain and transfer to an ice bath—this stops the cooking and makes the eggs easier to peel.
